Sweet Treat Sundae

Today has been filled with some delicious eats!  We started off the day with a Green Monster

That I made using Enriched Vanilla Rice Dream.  I had been buying the regular vanilla but I read on Tina’s Blog that the Enriched version had much better nutritional information – so I traded up

Next up – some french toast made with Pepperidge Farm Whole Wheat Cinnamon Raisin Bread.

Drizzled with a little maple syrup of course.

IMG_6150 For lunch I had the rest of my Squash a la Shannon from last night.  Sadly it escaped my camera.

Around 5:30 pm, Matt and I started working on dinner – we made Shrimp and Grits from Cooking Light.  We followed the recipe pretty closely except we used skim milk instead of 2% and water instead of broth (didn’t have any veggie broth).

IMG_6158 It looks kinda gross but I promise you it is delicious!  It is amazing how creamy this dish is using only skim milk, a little parmesan cheese and reduced fat cream cheese.  The herbs give this dish a great flavor.  An added bonus – it makes enough for lots of leftovers.

With our Shrimp and Grits, I had a salad with mixed greens, broccoli slaw and craisins.  I dressed this salad with a little olive oil and champagne vinegar.

IMG_6159Vanilla Frozen Yogurt.  We followed the same recipe we made a few weeks ago and use one container of Oikos Vanilla Greek yogurt.  This time we added about 1/3 of Scharffen Berger Dark Chocolate Mocha bar (heaven in the form of chocolate) and 2 chopped up Newman’s Own Organic Chocolate Newman-Os.  Drizzled with some caramel sauce

IMG_6164Love this frozen yogurt.  Takes only 20 minutes in the ice cream maker and produces a delicious dessert!

I have always wanted to make my own ice cream! And I LOVE Oikos Greek Yogurt. I will have to try that!

i watched it and was mortified!!! i havent had the chance to blog about it yet, but will…

and i am so making the shrimp and grits! well once Lent is over and i can have some semblance of meat again.
