The last few days/weeks of work have been nonstop filled with meetings, emails, etc. Today was no different. I was at my desk for a few minutes this morning (mostly preparing for some interviews I had) and then the rest of the day was spent bouncing from meeting to meeting.
I wanted a salad for lunch but knew I didn’t have enough time to eat one – solution: salad in a wrap.
One whole wheat wrap with two pieces of swiss cheese, two hard boiled egg whites and romaine lettuce, tomato, cucumber, onion, mushrooms, and red peppers
I tossed the salad with a little bit of honey mustard dressing. A very filling lunch and it didn’t take me long to eat. Bonus!
Around 5:30 pm I was STARVING so I snacked on some edamame. Needless to say, the edamame filled me up so I came home from work and had a small bowl of Superbowl Sunday Chili with some shredded cheddar cheese and sour cream
For dessert, I had to have another No Pudge Brownie – they are so good
Back to the reading. Matt gets home in another hour or so – I’m hoping to get my school work done before he gets home so we can watch Grey’s Anatomy!
