Tonight for dinner, we tried two new recipes. The first recipe Mediterranean Pasta with Greens was from the Clean Food cookbook I got for Christmas. The second recipe I saw on Twitter this afternoon from Olivia’s Organics – it was a recipe for Parmesan Spinach Cakes.
Unfortunately I could not find the recipe for the pasta online but it included kale, diced tomatoes, dried herbs, mirin and chickpeas.
This pasta dish was a little plain but I think the flavors will intensify as the dish sits. Matt thought the chickpeas tasted too “chickpea” like as they hadn’t had enough time to absorb the other flavors. Also, there wasn’t much “sauce” in this recipe so I hope the leftovers don’t get too dry. I am bringing leftovers for lunch and am interested to see how they taste.
The spinach cakes were also interesting…
I bought a big container of spinach this week thinking we would make Green Monsters. Neither Matt nor I have so I made these as a way to use up what is in the fridge. Unfortunately, I will probably not make these again. Matt thought they were a little too “Spinachy” as you couldn’t taste the parmesan or garlic. It was kind of a firmer creamed spinach. If you like creamed spinach, these are right up your alley.
Sadly, I brought some work home and hope to catch up on TV while I am being productive.

I like spinachy so I think I’d like the spinach cakes. I think they look great! Good luck being productive!

Maybe you could try the spinach cakes again and add more garlic and parmesan….just tweak the recipe a bit! I think they look fantastic. Of course, looks can be deceiving.
