Turkey Squares of Heaven

This afternoon, I had a delicious afternoon snack.  Some granola, an Oikos Vanilla Greek Yogurt and a few M&Ms.  Hit the spot – I had planned on an afternoon run, but ended up staying at work about 45 minutes too long.  By the time I got home, it was close to dark.

Growing up, Turkey Squares were a family favorite.  This is a recipe my Mom has perfected over the years.  Last Thanksgiving, my Mom made a turkey SPECIFICALLY to make Turkey Squares and Turkey Soup (which my Mom also has perfected). 

For Christmas, my Mom gave Matt and I 8 frozen squares (my sister and brother-in-law also got 8).  They are highly coveted in our family.  We have been rationing them for the last few months but have now eaten our last two.  Just a warning:  these are by no means healthy. 

Here is the recipe:

Turkey Squares (makes 4) 

 

  • 4 oz cream cheese, softened
  • ½ c sautéed, chopped mushrooms (approx. ½ of an 8 oz package)
  • 2 tbs of melted butter taken from the sautéed mushrooms
  • Additional melted butter to be brushed on after the squares are put together
  • ¼ tsp salt (or slightly less)
  • 1/8 tsp pepper (I use much less)
  • 2 tbs milk (can be skim)
  • 1/3 cup (scant) finely chopped scallions
  • 2 c cooked, cubed turkey
  • 8 oz can of Pillsbury Crescent rolls (regular ones or the new Crescent Recipe Creations which is 1 sheet of dough)
  • A few tbs of Italian bread crumbs
  1. Preheat oven to 350 degrees
  2. Blend cream cheese, mushroom butter, milk, salt and pepper with a fork or whisk until smooth (takes a few minutes)
  3. Add turkey, scallions and mushrooms; mix well.
  4. Adjust salt/pepper to taste at this point
  5. If using regular Crescent rolls, separate dough into 4 rectangles on parchment paper, and firmly press perforations to seal. If using Recipe Creations, unroll the dough and cut into 4 rectangles. For either, using a rolling pin, roll the dough out slightly to make rectangles a little longer/wider. Don’t make too thin!
  6. Divide filling into 4 equal portions, and place each portion on one of the 4 rectangles.
  7. Fold the corners together to seal, and make sure that each of the squares has no holes or perforations
  8. Place on baking sheet sprayed with Pam (not too close together, they spread while cooking)
  9. Brush tops with approx 1-2 tbs of freshly melted butter, then sprinkle bread crumbs on top.
  10. Bake for approx. 15-20 minutes until golden brown. Watch carefully – the bottoms burn easily!

Matt and I savored every last bite of these. 

We also split 2 red peppers and a pluot with dinner. 

I am going to miss these turkey squares.  Good thing Thanksgiving is coming up – my mom has promised more squares. 

I have tomorrow morning off and then I am off with the students for a retreat Friday night.  Any exciting weekend plans?

Those turkey squares look delicious…I’ve never heard of anything like that before!
