I have been baking up a storm for about 3 1/2 hours! I made Whole Wheat Chocolate Chip Zucchini bread for Caitlin’s Team in Training Bake Sale
And Zucchini Chocolate Chip Cookies from one of my favorite books Animal, Vegetable, Miracle by Barbara Kingsolver. I bought 3 huge zucchini from the Farmer’s Market on Tuesday and because I had to shred a lot of zucchini for these recipes, I broke out my food processor.

At this point, I took a break from baking to enjoy some lunch – I was trying to fill my belly with food instead of batter

After my pizza, it was back to work. I doubled the cookie recipe because I had no idea what to do with all the zucchini!
I even broke out one of my other favorite kitchen appliances

My coworkers got Matt and I this wonderful gift for our wedding last year. After making our Christmas cookies last year (we make a ton), Matt and I both agreed how wonderful this mixer is. Stop daydreaming about the mixer and get back to baking.

I sampled one – they are delicious. If you have kids (or spouses) who don’t like veggies, I highly recommend this recipe. You can barely taste the zucchini. In fact, I made them last summer and none of my coworkers guessed there was a veggie in them. I made these at the request of Patrick, my coworker, who is on his honeymoon in Vegas – I’m only slightly jealous.
I still had zucchini left over, so I said EUREKA, I will make the Fresh Zucchini Toss with Honey Dressing recipe I got at the NJ State Fair last week (when I saw the bees).
I made the dressing in a glass jar like the recipe called for – I only used about 1/2 the oil but kept everything else the same. I didn’t measure my zucchini but as I was pouring the dressing on, I realized I didn’t need it all – it was starting to look a little soupy!

As you can see, it got VERY soupy. But it is delicious! I took 2 bites and really enjoyed the flavor. The balance of the white wine vinegar and honey is great! I can’t wait to have more of this with dinner tonight.
I have been working all day, but haven’t crossed much off my to do list. It is so frustrating!
